Soft and Fluffy Oatmeal Pancakes

I love oatmeal. I don’t necessarily like sitting down and eating a bowl of oatmeal but I love using using it in various other ways....especially these pancakes! Since I have been gluten free I don’t get to enjoy these pancakes any longer but boy do my kids make up for that! I make these at least once a week for them. I always double the recipe so they can have leftovers for breakfast or even for a snack. 

I originally found this recipe in my sister’s small town newspaper. One year they put out a paper that was just recipes submitted by locals. You know, the kind of recipes that everyday, ordinary people use and you know they are good! I have tweeked this recipe ever so slightly to suit our needs. I hope your family enjoys it as much as mine does!
